Large, but very lightweight and easy to handle, this 240mm (9.4") Gyuto (Chef's Knife) made by Hokiyama in Tosa, Japan for Ittetsu. Hokiyama has been making knives for over a hundred years, using nearly 1000 year old traditional methods in combination with contemporary steels and standards.
This knife is perfect for all sorts of cooking, but we specifically love using it to make traditional nappa cabbage kimchi. Its length and thinness is perfect for making long perfect cuts. It is also relatively low maintenance. Hand wash and towel dry only.
