The Sakai Takayuki Grand Chef Antares Sujihiki is a rare and beautiful, 270mm long (10.6"), extra thin and light slicer made from Swedish stainless steel in Sakai (Osaka), Japan.
The sujihiki is very narrow and thin in comparison to its length. This allows for maximum cut lengths with minimum friction when slicing through meat. This is a perfect combination for slicing through delicate fish in a single clean stroke, in particular for sashimi. This knife is also useful for such things as large pieces of meat from poultry. This blade is also characterized by double-beveled edges.
