Beautiful, heavy duty workhorse knife, hand forged in Sakai (Osaka), Japan for Sakai Takayuki, this Sanpou (Three Treasures) Gyuto (chef knife) is not for beginners. Its white carbon steel edge takes and holds an edge very well, but the knife is initially high maintenance, because of its soft iron cladding.
This knife is for enthusiasts and professionals and must be hand washed and towel dried immediately after use. We would recommend occasionally applying a thin coat of mineral oil or camellia oil to the blade when storing to protect it from rust. If cared for properly, over time this knife will develop a beautiful multicolor protective patina.
